The winter solstice on December 21 marks the shortest day and longest night of the year, a time when many reflect on the turning of the seasons and the slow return of light. It’s a period of warmth, introspection, and celebration, often centered around sharing comforting and meaningful meals. These three recipes are inspired by seasonal traditions and flavors that honor this time of renewal. From a citrus-glazed roasted vegetable dish that balances earthiness with brightness, to a hearty lentil stew for cozy nourishment, and a citrus almond cake adapted from Mediterranean culinary traditions—these dishes offer something for everyone, as we move from winter’s depths toward brighter days. We invite you to gather around the table, reflect on the beauty of the solstice, and welcome the light-filled days ahead.

Roasted Winter Vegetables with Citrus Glaze
(adapted from “Barefoot Contessa Family Style)

Ingredients
2 c carrots, parsnips, and sweet potatoes, cubed
3 T olive oil
2 T honey or maple syrup
Zest and juice of 1 orange
1 t rosemary
Salt and pepper to taste

Instructions
Preheat the oven to 400°F.
Toss vegetables with olive oil, honey, orange juice zest, rosemary, salt, and pepper.
Spread on a baking sheet and roast for 25-30 minutes, stirring halfway through.

Lentil and Vegetable Stew
(inspired by “Hearty Winter Soups” by Anna Green)

Ingredients
1 c green or brown lentils
4 c vegetable broth
1 c diced carrots and celery
1 diced onion
2 c chopped kale or spinach
1 t turmeric
1 t cumin
Salt and pepper to taste

Instructions
Sauté onions, carrots, and celery in a large pot until softened.
Add lentils, broth, turmeric, and cumin. Simmer for 30-35 minutes.
Stir in kale or spinach and cook for 5 minutes. Serve with crusty bread.


Citrus Almond Cake
(adapted from “Mediterranean Desserts: A Taste of Sunshine” by Maria Lopez)


Ingredients
2 whole oranges, boiled and puréed
2 c almond meal
1 c sugar
4 eggs
1 t baking powder


Instructions
Boil oranges for 1 hour. Let cool, remove seeds, and purée.
Preheat oven to 350°F.
Mix puréed oranges, almond meal, sugar, eggs, and baking powder.
Pour into a greased pan and bake for 40-50 minutes.
