Elizabeth’s Apple Ricotta Pancakes For all my favorite mothers
1 C flour, sifted
1/4 t salt
1 T sugar
1 T baking powder (yes, that’s right!)
1 egg
1 C milk
2 heaping T Ricotta cheese
2 T applesauce (your favorite. I enjoy making my own these days)
2 T melted butter or plant substitute, cooled
Resift flour with dry ingredients into a mixing bowl. Beat together egg, milk, Ricotta cheese, and applesauce. Stir into flour mixture. Add melted, cooled butter and beat with whisk until smooth. Cook in dollops on a hot griddle or in an iron skillet. If too thick, add milk, starting with one tablespoon. Makes 10-12 pancakes. Recipe can be doubled and stores well overnight.
Suggested to serve with maple or a compatible berry syrup, and a choice of breakfast ham and/or fruit, fresh or compote.
